Three Cheese Breakfast Casserole

After New Years Eve and you have those days when you’d rather just stay in bed and read, this casserole may just do the trick for brunch instead of early breakfast.  Actually it would be great even reheated the next day to eat on your way to work.

I started thinking about this when my son Dave made baked potatoes with our supper.  I asked him to make a few extras to use with breakfast, and then this breakfast casserole was born.  I actually had all of the ingredients already in my fridge–an added benefit.  Here’s all the ingredients I dug out of my fridge to use to make this extremely easy and delicious recipe.

  • 1 lb sausage
  • 3 medium sized baked potatoes
  • 6 eggs
  • 1/4 cup milk
  • parmesan cheese
  • 1 and 1/2 cup Colby/Jack cheese
  • salt and pepper to taste

How to Make the Casserole

Now the great thing about this casserole is that you can adjust it to fit the ingredients you have on hand.  Did you buy that huge bag of bacon pieces at Sam’s?  Use those instead of the sausage.  Do you like green peppers and onions?  Add those to the mix.  You get the idea.  Here’s how I put it all together.

  1. Preheat your oven to 350 degrees.
  2. Start the sausage frying if you’ve opted for that so that it’s ready when you are to add it to the casserole.
  3. As the sausage fries, grate the potatoes.  I like to use a hand grater, but a food processor will do the job a lot faster.Three Cheese Breakfast Casserole
  4. Add a little salt and pepper and stir together.
  5. Melt 1/4 cup butter in the microwave and pour it over the grated potatoes and stir.  This will add moisture to the already cooked potatoes.
  6. Place the potatoes in the bottom of a medium sized casserole dish and top with a little parmesan cheese.  I just shook a little over the top.  Parmesan cheese has a strong flavor, so take it easy at first.Three Cheese Breakfast Casserole
  7. Put the eggs into a bowl and add the milk and a little more salt and pepper.
  8. Beat together with a fork until combined.
  9. By this time the sausage should be ready.  Drain the sausage–we don’t want the extra fat in our casserole–and sprinkle over the top of the potatoes.  I used slightly less than a pound, but the top was completely covered with sausage.
  10. Now pour the eggs over all of it and top with the Colby/Jack cheese.Three Cheese Breakfast Casserole
  11. Cover it with foil and bake in the oven (350) for 30 minutes.
  12. Uncover the casserole and bake an additional 10 minutes.
  13. Tip:  Once you’re ready to take it out of the oven, test the center for doneness.  Ovens and casserole dishes do vary and your casserole may take a little longer than ours did.
  14. Let rest for 10 minutes and serve.

YUMMY! Three Cheese Breakfast Casserole

The best thing about this casserole is you can totally make it your own.  Add olives and garlic for a Mediterranean feel.  Add some picante sauce to spice it up Mexican style.  Mix and match the cheeses to give a different cheesy texture and flavor.  Let us know in the comments how you made this casserole your own.  We’d like to try your version!
