Terra’s Homemade Potato Soup Recipe

For a delicious soup that defines comfort food, this potato soup can’t be beat.  We made a giant pot tonight and there’s not one spoonful left!  Make it using the broth method given by our March Kitchen Chick, Terra Mueller, and it’s all the better, if that were possible. 🙂

Ingredients
  • 2 tbsp butter
  • 3/4 cup onion chopped
  • 2 tbsp flour
  • 5 cups hot chicken stock
  • 1 cup carrots sliced
  • 1 cup celery sliced
  • 4 medium potatoes cubed
  • 1 cup fresh parsley chopped
  • 1 tsp Lawry's Season Salt
  • 1 tsp dill
  • 1/4 tsp pepper
  • 1 cup milk or half and half

  • 1 cup celery sliced
  • 4 medium potatoes cubed

Instructions
  1. Melt butter in a large soup kettle.
  2. Add onion and saute until soft.
  3. Add flour and cook, stirring for 3-4 minutes.
  4. Remove from heat and slowly stir in the hot chicken stock.
  5. Add carrots and celery and simmer gently for about 10 minutes.
  6. Then add the potatoes and continue simmering until vegetables are tender, for about 20 minutes.
  7. Add seasonings and finish off with milk. Makes about 8 cups.

A note from Terra:  One of my dear friends from Arkansas shared this recipe with me many years ago and everytime I make it I think of her. This soup is so versatile.  Sometimes I omit the potatoes and add chicken and pour over hot noodles.  Sometimes I add ground beef to make it heartier.  However you decide to make it, it is always delicious!
