Ingredients
  • 1 lb eckrich sausage
  • 2 medium potatoes cubed
  • 3 large peppers red, green and yellow--sliced
  • 2 tbsp olive oil
  • 1 tbsp Lawry's Season Salt or to taste

Instructions
  1. Boil the potatoes in salted water until par-boiled (about 10 minutes)
  2. Drain the potatoes in a colander and sprinkle Lawry's Season salt over the top of them. Toss until potatoes are covered.
  3. Heat a skillet on medium until hot and add the olive oil to the pan. Swirl to cover the surface of the pan.
  4. Add the potatoes and cook until brown. Add the peppers and cook until tender.
  5. Slice the sausage into rounds and add to the vegetables. Toss and fry until sausage is browned.
  6. Turn down the heat slightly and cover with a lid to bring all ingredients to the same temperature, turning every few minutes if needed.
  7. Let simmer about 15 minutes. Serve as is on a plate.
Recipe Notes

You can dice and cut your vegies and sausage to your liking, just remember that thicker slices will take more time to cook.  Also, if you'd like to make this recipe with different peppers, we throw in banana peppers from time to time, it's fine.  Let us know how you've adjusted it so we can try it YOUR way.  🙂 This recipe has become a staple in our family.  We LOVE it!
