This delicious combination comes from our post Meals for a Month with Mary and Samantha.

I had never made this before.  It was a recipe that Mary and Samantha suggested and let me tell you, it’s one we have frequently at our house now.  It’s a blend of sweet peppers, potatoes, and spicy sausage that stimulates the tongue and satisfies the tummy.  Best of all, it’s so easy to make.

Boil the potatoes in salted water until par-boiled (about 10 minutes)

Drain the potatoes in a colander and sprinkle Lawry's Season salt over the top of them. Toss until potatoes are covered.

Heat a skillet on medium until hot and add the olive oil to the pan. Swirl to cover the surface of the pan.

Add the potatoes and cook until brown. Add the peppers and cook until tender.

Slice the sausage into rounds and add to the vegetables. Toss and fry until sausage is browned.

Turn down the heat slightly and cover with a lid to bring all ingredients to the same temperature, turning every few minutes if needed.

Let simmer about 15 minutes. Serve as is on a plate.
