Adjust Servings:
8 slices Sourdough Bread
8 slices Sharp Cheddar Cheese
1 Jar Pickled Jalapeno Slices
1 teaspoon Mustard for each sandwich
Butter for outsides of bread

When I was a child, this sandwich was invented by my mother who loved Mexican food.  I never tried it until my sister Terra brought it back to my memory as our new March Kitchen Chick.  I guess Mom was right all along.  But, then again, she usually was.  🙂

Lay the bread slices out and spread the yellow mustard on each slice.

Put two slices of cheddar cheese on one slice of bread and lay the jalapeno slices on top evenly.

Put the two slices together and butter the top side of the sandwich.

Cook on medium until the sandwich is golden brown on one side. I like to put a cover over the top of the sandwich to make the melting of the cheese easier.

Lightly butter the top side of the bread and flip the sandwich over to brown the other side.

Remove from pan and serve with your favorite soup. We served ours with Tomato Basil soup. Yum!
