Mashed Potatoes in the Instant Pot

If you’re like me and love mashed potatoes, you’ve got to try them in the instant pot.  A little faith and a couple of precautions will get you on your way.  The first thing to remember is to choose the right potato.  Russets are a great choice because they don’t require as much mashing so they tend to be light and fluffy instead of sticky and gluey.  The next thing to remember is to keep your potato chunks around the same size.  This way they will cook more evenly.  With these two things in mind and following a few simple directions, you may never make mashed potatoes any other way.  Let’s get started!

Ingredients
  • 6 medium-sized potatoes cut into chunks
  • 1 cup water
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 4 Tablespoons butter
  • 1 cup milk

Instructions
  1. Put the rack in the instant pot with 1 cup of water.
  2. Put the potato chunks on the rack to keep them out of the water.
  3. Cover and seal lid and push manual 8 minutes. Let the instant pot do its magic.
  4. Quick release and open the pot. Drain the water out and add salt, pepper, butter and milk to the potatoes.mashed potatoes
  5. Mash with a potato masher or electric mixer on low speed. High speed can make your potatoes gluey.
  6. You're done! Put into a dish and serve.
