Ingredients

Adjust Servings:
3 Chicken Breast large
1/4 cup Olive Oil
2 teaspoons Basil
1 teaspoon Oregano
1 teaspoon Parsley
3 large cloves Garlic minced
1 and 1/2 cups Heavy Cream
1/2 Tablespoon Lawry's Season Salt
1 cup Parmesan flaked
1 small jar Sun dried Tomatoes
2 cups Frozen Spinach chopped and drained

I’m always looking for a good chicken recipe, and this is one of the best ever!  Inspired by This Old Gal, I put a Kitchen Chicks spin and it was loved by all.  If you haven’t got your Instant Pot yet, take the plunge and get one.  Here’s the link on Amazon.  I’m not a great spinach lover, but this made even the spinach taste good.  My husband suggested putting the chicken on a bed of spinach–I may not go that far.  lol  I think it would be very good over rice, potatoes or pasta though.  Any way you slice it, you are going to love this recipe!

Completely thaw 3 large chicken breasts and cut into 6 pieces.

Smash each portion flat with a meat hammer.

Put into a bowl with olive oil, garlic, basil, oregano, and parsley.

Pour the heavy cream into a measuring cup and stir in the Lawry's Season Salt. Let sit until time to add to chicken.

Mix herbs into chicken and allow to marinate in the bowl while the Instant Pot heats on Saute until the indicator says "HOT".

Once the Instant Pot say "HOT", Pour the bowl of marinade and chicken into the pot. Brown the chicken on both sides. I used a spatula to turn it.

After browning, press the off button and then press manual for 3 minutes. Place the lid on and turn the knob to "Sealing". When you hear the beep, push off, quick release and then push the saute button again.

Add the cream with the Lawry's season salt into the chicken and let simmer 5 minutes.

After simmering the cream and chicken, turn the Instant Pot to off and stir in the Parmesan cheese until incorporated.

Drain the sun dried tomatoes and spinach and add to the rest of the ingredients in the Instant Pot.

Turn to Saute and let it heat for about 2 more minutes. Serve immediately with your favorite vegetable, rice or pasta.
