This old Irish recipe is usually baked in the oven, but since I love my Instant Pot, you know I had to try it Instant Pot style.  The result was fork tender vegetables and a smiling husband.

Although this recipe is very simple, it’s very flavorful.  The whole thing start to finish only cost a little over $5.oo for the whole meal, which means it’s very economical too.  I can’t wait for you to try this yummy, easy, cost effective Instant Pot  version.  Enjoy!

Steps

1
Done

Turn the Instant Pot on saute and add the butter and chopped onions. Saute until onions are translucent.

2
Done

Remove the onions from the pot and pour 1/2 cup of the beef broth into the bottom to deglaze the pot. Push the cancel button after deglazing.

3
Done

Layer half of the potatoes into the bottom of the pot, add half the onions over the top, half the carrots and half the Eckrich sausage.

4
Done

Shake a little Lawry's Season Salt over the top--not too much, you don't want your dinner to taste like it came from the Morton Salt Company. :)

5
Done

Layer the rest of the potatoes, onions, carrots and sausage over the first layer. I didn't add any additional salt and it tasted great.

6
Done

Pour the remaining 1 and 1/2 cup of beef broth over the whole thing and set the Instant Pot to manual 15 minutes.

7
Done

After the meal has gone through its cycle, quick release and you're ready to serve.
