Instant Pot Irish Stacked Dinner

This old Irish recipe is usually baked in the oven, but since I love my Instant Pot, you know I had to try it Instant Pot style.  The result was fork tender vegetables and a smiling husband.

Although this recipe is very simple, it’s very flavorful.  The whole thing start to finish only cost a little over $5.oo for the whole meal, which means it’s very economical too.  I can’t wait for you to try this yummy, easy, cost effective Instant Pot  version.  Enjoy!

Ingredients
  • 1 medium white onion chopped
  • 2 Tbs butter
  • 2 cups beef broth divided
  • 6 medium potatoes sliced thinly
  • 1 bag sliced carrots
  • 1 package eckrich smoked beef sausage sliced into thin rounds
  • a few shakes Lawry's Season Salt

Instructions
  1. Turn the Instant Pot on saute and add the butter and chopped onions. Saute until onions are transluscent.
  2. Remove the onions from the pot and pour 1/2 cup of the beef broth into the bottom to deglaze the pot. Push the cancel button after deglazing.
  3. Layer half of the potatoes into the bottom of the pot, add half the onions over the top, half the carrots and half the eckrich sausage.
  4. Shake a little Lawry's Season Salt over the top--not too much, you don't want your dinner to taste like it came from the Morton Salt Company. 🙂
  5. Layer the rest of the potatoes, onions, carrots and sausage over the first layer. I didn't add any additional salt and it tasted great.
  6. Pour the remaining 1 and 1/2 cup of beef broth over the whole thing and set the Instant Pot to manual 15 minutes.
  7. After the meal has gone through its cycle, quick release and you're ready to serve.
Recipe Notes

There was plenty of broth if you like to add that to your meal, but we decided to lift out the vegies and the meat with a slotted spoon.  My never-eat-leftovers husband said he can't wait to have some for lunch tomorrow.  I know it seems simple, but this simple dish is full of flavor.  I know you will enjoy it!
