Fast and Easy Chicken Stir Fry
If you’re like me, you’ve been pinching a few pennies to get ready for school to start.  I’ve really been trying to eat at home to cut out the expense of eating at a restaurant. It’s easy to get in a rut and say, “Let’s just go out to eat.”  While eating out is easier and can be fun, doing a lot of it is hard on your pocketbook and not always as nutritious.  So my husband and I decided to start planning our meals at home.  You know what?  We think they taste better too! So, I decided to make a quick and easy meal that’s loaded with vegetables and tastes YUMMY!

Fast & Easy Chicken Stir Fry For the Win!

Here’s a recipe that’s not only easy to make, but tastes delicious without much time in the kitchen.

Ingredients

  • 2 Tablespoons olive oil
  • 2 pounds diced chicken (you can even use the frozen kind)
  • 2 bags stir fry vegies (I like to mix broccoli stir fry and snow pea stir fry)
  • 1 bottle stir fry sauce (I use La Choy, but any kind is fine)
  • 2 cups cooked rice or chow mein noodles

How to Make It It

  1. Heat the olive oil in the pan–just a little.
  2. Pour the diced chicken into the pan and cook until no longer pink.  If you’re using frozen in a bag, cook until unfrozen.
  3. Pour in the two bags of stir fry vegies and cook on medium with the chicken until thawed.
  4. Pour the stir fry sauce over everything.
  5. Simmer on low for ten minutes and serve over rice or chow mein noodles.

So fast.  So easy.  So delicious!
