Cherry Roll Ups

Cherry roll ups were my mother’s favorite Christmas cookie and it has become mine as well.  They are just slightly sweet and have a cream cheese wrap that adds depth to the flavor.  Enjoy!

Ingredients
  • 1 cup butter
  • 8 ounces cream cheese
  • 1/4 tsp salt
  • 2 cups flour
  • marachino cherries
  • powdered sugar

Instructions
  1. Mix together butter, cream cheese, salt and flour.
  2. Cool dough in refrigerator overnight.
  3. Roll out dough onto a powdered sugared surface to 1/8 inch thick.
  4. Cut into 3 inch strips and wrap around a marachino cherry, pinching the dough together where it meets at the end. Be sure and blend it well or the dough will split.
  5. Roll each cookie in powdered sugar and place on a cookie sheet sprayed with cooking spray.
  6. Bake the cookies for 12-15 minutes at 350 degrees and cool on a wire rack.
