Cherry roll ups were my mother's favorite Christmas cookie and it has become mine as well.  They are just slightly sweet and have a cream cheese wrap that adds depth to the flavor.  Enjoy!

This cookie is a Kitchen Chicks Christmas favorite.  We make them every Christmas rolling the soft dough out, cutting it into strips and then rolling up the sweet maraschino cherries in the middle.  I remember making these with my mom when I was little.  I fumbled with the dough as I tried to pinch the sides together so that they wouldn’t break apart while they baked.  I still sort of struggle with that, but any way you slice it, these cookies still bring back great memories of the loving, guiding hands of my mother and the Christmas joy they brought to our annual display of Christmas cookies.

The recipe is easy to make and has only a few ingredients.  The beautiful, tasty result will make you want them on your list of Christmas cookies year after year.

Mix together butter, cream cheese, salt and flour.

Cool dough in refrigerator overnight.

Roll out dough onto a powdered sugared surface to 1/8 inch thick.

Cut into 3 inch strips and wrap around a marachino cherry, pinching the dough together where it meets at the end. Be sure and blend it well or the dough will split.

Roll each cookie in powdered sugar and place on a cookie sheet sprayed with cooking spray.

Bake the cookies for 12-15 minutes at 350 degrees and cool on a wire rack.
