Instructions
  1. Mix the softened butter and sugar in a medium sized mixing bowl until smooth and creamy.
  2. Add the egg, vanilla and peppermint and mix until incorporated.
  3. Sprinkle the salt over the top of the dough and mix in the flour 1 cup at a time until it forms a ball.
  4. Divide the dough in half and form two dough balls. Set one dough ball aside and work in red food coloring a little at a time into the other ball until you have a deep red uniform color.
  5. Wrap both balls in plastic wrap and cool in fridge overnight.
  6. In the morning, pinch one inch balls off each of the larger balls, roll into ropes and twist together gently. pinch each end and form cane.
  7. bake at 350 degrees for 10-12 minutes. As soon as they come out of the oven, sprinkle with processed peppermint candies and allow to cool on wire racks.
Recipe Notes

These cookies must be refrigerated.  If you leave that step out, the cookies will flatten and not be round and puffy.

We like the way the peppermint candies look like snow on the candy canes.
